- 4 C chopped dried fruit (photo has figs, cranberries, dates, pears, peaches, pineapple, apricots, glace cherries (red & green).
- 1/2 C chopped dark chocolate (I use Whittakers 72% Cocoa Dark Ghana)
- 3/4 C chopped almonds
- 1 1/2 C gluten free flour (or plain flour)
- 1 tsp mixed spice
- 3 eggs
- 3 tbsp liquid honey.
Put all fruit and nuts in a large bowl. Sift flour and spice together and mix so the fruit is coated in flour.
Beat eggs, add with liquid honey to the dry ingredients.
Mix until well combined. Press into sponge roll tin 32x22cm. Bake @ 240degC for 45-60 minutes.
Note: You could also include sultanas, raisins, currents however this batch was made to take to an event where someone doesn't like raisins so I left them out. Such is the beauty of the recipe!
Quick and Easy Version
Replace the 4 Cups chopped, dried fruit with packaged dried fruit mix.
Replace the chopped dark chocolate with chocolate drops (note these aren't dairy free).
